Gourmet Mac & Cheese

Gourmet Mac & Cheese | Living Healthy in Seattle

Sometimes, it’s more than okay to indulge.

Sometimes, all you need is a pint of the best ice cream all to yourself. (Pro tip: use a baby spoon… it lasts longer and prevents you from shoveling all that wonderfulness into your mouth in 27 seconds. Brain freeze avoided!)

Sometimes, all you really need is a room full of puppies. No explanation required here.

And sometimes, all you actually need is some decadent homemade mac & cheese.

Forget the whole wheat pasta, reduced fat cheese and vegetables. Those are all delicious, of course, but let’s be real, you can eat those things any time.

THIS time, lumachelle pasta is enveloped in a creamy, rich sauce composed of extra sharp white cheddar and Gruyere. Nutmeg adds that little something something.

Ina Garten knew what she was doing once again. I just had to switch it up a bit.

Anddddd if you really want to, use whole wheat pasta, reduced fat cheddar and add some fresh broccoli to the cheesiness. That would be good too, but sometimes, all you actually need is to be bad.

P.S. If you’re all “luma-whut?!” go ahead and use regular pasta shells instead.
