I know I know.

The photo looks more like a salad, than actual nachos.

But these nachos are so fresh, healthy (minus all that lovely cheese), full of flavor anddd fun to eat.

Plus, salads are awesome anyway. Especially salads that look like a fiesta.

So I guess I should have titled this recipe “Salad Nachos” instead of “Gourmet Nachos.”

But they are kind of gourmet too.

It all works out in the end.

You’ll see.

Before I get into the yummy details, I just have to say that I inhaled that entire plate of nachos in the photo, and then proceeded to dig into a bowl of vanilla bean ice cream topped with crunchy peanut butter and a warm, crumbled up peanut butter cookie.

Ha.

People, I can eat.

Anyway…

Crisp corn tortilla chips are topped with flavorful sharp cheddar, Monterey Jack cheese, sweet caramelized onion, black beans, juicy corn, bright red bell pepper, spicy jalapeno and chile peppers, fresh pico de gallo, creamy guacamole and crisp lettuce. Bam! Salad Nachos 😉

P.S. Make your own pico de gallo and guacamole for extra credit.

P.P.S. Serve the nachos on warmed plates because they tend to cool off quick.

P.P.P.S. Peanut butter on peanut butter is always a good idea.
