Healthy Veggie Fried Rice | Living Healthy in Seattle

Last week I consumed a ridiculous amount of bread, cheese and more bread.

I’m not complaining or anything.

Because this all took place in Paris.

So you pretty much have to eat baguettes, croissants, crepes (with Nutella) and all types of cheese all day every day.

It’s expected.

It’s a requirement actually.

But now, back to real life.

Real life includes some vegetables and whole grains.

So yes.

Healthy veggie fried rice was in order.

No this is probably not “authentic.”

But that’s okay, because it tastes good, it’s relatively easy and… it’s healthy!

Nutty brown rice, crunchy carrots, fresh spinach, minced garlic, spicy red pepper flakes, protein-packed eggs, toasted sesame seeds, bright scallions and sweet teriyaki sauce got it going on.

P.S. Add some peas or even tofu if you want to take this dish up a notch.

P.P.S. I know, I really need an actual camera. My iPhone 5 is just not cutting it anymore. (Maybe I can steal, ahem borrow, my mom’s camera permanently hehe.)
