Weellll.

Summer just came and went in the blink of an eye.

But I’m not ready for fall!

Pumpkin spice everything, itchy scarves, scandalous Halloween costumes and, heaven forbid, Christmas toons can all just wait a minute.

Thank you very much!

Besides, we still have juicy nectarines, sweet corn, and fragrant basil at our fingertips.

I currently have a boatload (and them some) of the most amazing succulent nectarines on hand, so I’m putting those beauties to work!

This salad is extremely fresh and flavorful, plus easy peasy.

You really can’t go wrong.

(Really really.)

So all you have to do is whisk a splash of zesty fresh lemon juice with extra virgin olive oil, then gently fold in a few chopped nectarines, sweet raw corn kernels, creamy cubed avocado, plus a handful of torn basil leaves. Season with fancy pants sea salt then you’re good to go.

Mmmm tastes like summer.

P.S. Do not attempt to use unripe nectarines. You want juicy, sweet suckers! No crunchy bites over here please and thank you.

P.P.S. A really ripe cado will kind of mush apart when you fold it in the salad, so a ripe but firmer fruit will do you favors.

Ingredients
  

  • 2 teaspoons fresh lemon juice
  • 2 teaspoons extra virgin olive oil
  • 2 cups chopped nectarines (about 3 nectarines)
  • 1 heaping cup raw corn kernels (about 1 cob)
  • 1/2 cup diced avocado (about 1/2 medium-large avocado)
  • 1/4 cup roughly chopped or torn fresh basil
  • Sea salt, to taste

Instructions
 

  • Whisk the lemon juice and olive oil in a medium bowl until well combined.
  • Gently fold in the nectarines, corn, avocado, and basil.
  • Season with salt to taste.
