Nectarine Crisp Toast | Living Healthy in Seattle

Summer can’t possibly be over yet.

I’m just not ready!

Not ready for the inevitable goosebumps due to nippy coldness, gray on gray, loaded clouds, continuous drizzle, and a lack of fresh summer produce.

So I’m trying to cram as much summer eating and living into September as humanly possible!

Sorry pumpkin, I’m not keen on switching beaus quite yet.

Instead I’m stuffing my freezer with the summer goods to hopefully enjoy during the fall.

(I already know it’s not going to last until winter.)

And what I’m not freezing I’m sure as heck stuffing in my face like there’s no tomorrow.

That’s where this luscious toast comes in.

You start with whole grain bread, then get it nice and golden brown.

Slather your carbs with creamy almond butter and follow up with a few generous dashes of ground cinnamon.

Now for the exciting part (besides licking the almond butter knife)…

Plop a handful of juicy nectarine slices right on there!

Oh yeahhh.

A sprinkle of crunchy granola will seal the deal.

Nectarine crisp, in healthy toast form.

I’m no Einstein but it’s pretty genius.

Hehe.

P.S. Use gluten-free bread to make this a gluten-free treat!

P.P.S. You could certainly switch your toast game up a bit… peanut butter + plums anyone?
