PB&J Acai Smoothie

PB&J Acai Smoothie | Living Healthy in SeattleIt’s always a very happy day when I realize there are precious frozen acai packets lounging about in my produce-packed freezer.

Yesss.

Because acai packets mean one thing… acai bowls, which are absolutely delicious and refreshing!

Proper acai bowls are loaded up with toppings upon toppings… think creamy banana slices, fresh berries, hemp seeds, tropical coconut flakes, nut butter drizzles for days, and granola!

To be completely honest I was feeling even more lazy than normal, so I opted for a smoothie… basically an excuse to not deal with that exciting, yet expensive and tedious topping situation (because you can’t just dump the stuff on there–it’s all about presentation these days).

But smoothies deserve mouth-watering, photogenic nut butter drizzles too, so this bad boy got double peanut butter action (of course) along with a little toasted coconut for some nice textural contrast.

Yep.

The fruity smoothie itself is packed with acai (well duh), sweet ripe banana, frozen strawberries (hello PB&J!), nutty peanut butter, almond milk (or canned lite coconut milk for a richer treat), plus a touch of ground cinnamon.

Pull out that blender and get to it.

P.S. You could use frozen blueberries or blackberries orrr a combo of berries instead of strawberries. Yummm.

P.P.S. Make sure your banana is a speckled specimen because we want all the natural sweetness we can get! No added sugars over here today.
