Yep, it’s sick season.

I’ve had 3 separate sore throats/colds/nasties this past month.

Now that’s no fun.

No fun at all.

Despite regularly exercising in my living room, eating and drinking relatively healthily, washing my hands like a crazy person, and attempting to get a decent amount of zzz’s, I still managed to pick up those bugs.

Blame it on the anxiety that naturally comes along with being an uptight perfectionist.

Sigh.

Soo my throat was definitely in need of something soothing and cooling, but ice cream for breakfast did not sound like such a great idea at the time.

Instead I decided to blend up a refreshing acai bowl packed with super healthy ingredients!

(Let’s just forget for a couple minutes that it’s literally freezing outside.)

Even though this bowl is incredibly healthy, it actually tastes really good too!

That’s always the goal over here.

All you have to do is blend chilled tropical coconut water with goji berries, naturally sweet ripe banana, tart frozen cranberries, a frozen acai packet, and chia seeds! I didn’t even need to add any sweetener, but if you want, feel free to drizzle in a little maple syrup, or honey if you’re not vegan.

I plopped a blob of creamy salted peanut butter on top for some extra protein.

And extra deliciousness.

Peanut butter makes everything better, don’t you know.

P.S. This powerhouse bowl is vegan, gluten-free, paleo (minus the peanut butter blob), and pretty much perfect.

P.P.S. Don’t forget your toppings! I love fresh banana slices and frozen cranberries. But I added some goji berries and chia seeds for some crunch. PB takes it to a whole nother level.

      Hi Pat, so glad to hear you enjoyed it! Water or almond milk can definitely be used to replace the coconut water.
