I’m always trying to think up quick, easy, and healthy (of course) dinners to whip up when I’m super tired after work and borderline hangry.

Which is pretty much every day, so I need a lot of ideas.

Because scrambled eggs and baby carrots can get a little boring after a while.

(Um yep I call eggs and carrots “dinner” way too often.)

Mexican and Italian inspired dishes are still my go-tos (mostly because of the potential cheesiness, duh).

Although cheese isn’t always completely necessary… bear with me please.

Something spicy with protein and avocado was sounding extra drool-worthy the other day.

Enter vegan burrito bowl.

I love carby tortillas and melty cheese, but this burrito bowl is almost as delicious without those two characters involved.

Yes almost, I’m not going to lie to you.

A cheesy, real burrito would elicit even more drool.

Although my abs surely would not appreciate the whole burrito thing.

And I always manage to fail when it comes to folding up burritos.

Probably because I get all greedy and try to stuff too much filling up in there.

But with a burrito bowl, you can have as much filling as you want.

Just make sure you grab a big enough bowl!

For this concoction (probably not the right word here, but whatever) simply heat up some tropical coconut oil, then saute a bit of spicy jalapeno, juicy tomato, crisp red bell pepper, and sweet corn. Toss in some hearty pinto beans and season your mixture up with cheesy nutritional yeast and earthy ground cumin, plus some salt. Spoon all of that goodness onto a big pile of hot brown rice, then top it off with creamy avocado slices, fresh cilantro, a squeeze of lime juice, and hot sauce!

Now shovel that into your face asap.

Or slowly chew and actually enjoy it like the semi-civilized being that you are.

P.S. You can really customize this thing. Use black beans instead of pinto, leave out the jalapeno, use different colored bell peppers, add onions to the mix, top it off with cheese… if you dare.

P.P.S. Have guac on hand? Ditch the avocado slices and plop that stuff right on your burrito bowl.

P.P.P.S. “Go-tos” looks kind of really weird… well you get the point anyway.
