Grilling season is coming to a close.

Tear.

So I’ve been trying to grill anything and everything during these last couple weeks.

Including pizza, which I already so generously shared with you all.

I’m not quite adventurous enough to grill lettuce though…

Something about hot, wilty romaine does not sound too appetizing, for some reason.

But I’m sure it could possibly, potentially be kind of edible.

Quesadillas sound like a much safer bet to me.

And just ever so slightly more delicious, because quesadillas almost always involve cheese.

Although, I will share a vegan friendly idea with you in just a bit.

So be patient if you’re not about that cheese life.

No judgement.

These quesadillas are semi-healthy because they are packed with a variety of grilled veggies and topped with a quick homemade guac!

Now doesn’t that sound exciting?

Oh and I use whole grain tortillas, soo even more healthy is introduced into this cheesy situation.

(If you’re going the gluten-free direction, use your fave gluten-free tortillas.)

You want to know what makes these quesadillas even more exciting?

After you stuff them with your veggies and cheese, you get to throw those puppies on the grill for some double grilling action.

Make that triple grilling action because the guac contains grilled jalapeno.

Oh yeah, I definitely went to town on this one.

And now for even more detail and mouthwatering adjectives…

Whole grain tortillas are stuffed with marinated grilled zucchini, red bell pepper, meaty crimini mushrooms, sweet raw corn, sharp cheddar cheese, and Monterey Jack, then grilled until perfectly crispy and melty. Let’s not forget about our spicy guac, containing creamy mashed avocado (of course), fresh lime juice, salt, grilled jalapeno, juicy summer tomatoes, and fresh cilantro.

Fire up your grill!

P.S. For an even healthier, vegan-friendly option, swap in mashed sweet potato for the cheese. Use enough to help hold all of your grilled veggies together so they don’t go tumbling out when you attempt to flip.

P.P.S. You don’t have to use foil for grilling your quesadillas, I was just feeling a little wimpy and didn’t want to risk any stickage.

P.P.P.S. Depending on the size of your jalapeno (and the pepper itself… they’re all unique individuals when it comes to level of spice) your guac may turn out quite hot. So use your best judgement if you’re sensitive to fire.

P.P.P.P.S. You could serve this as an appetizer and feed about 8 peeps, or you can go the main dish route and feed 4 hungry peeps.
