So you might be seeing a ridiculous amount of 2-ingredient pancakes across the web lately.

In case you live under a rock, those 2 ingredients are eggs and banana.

Scrambled bananas anyone?

Noooo thank you.

But, add a few more ingredients in there and you’ve got yourself a yummy plateful of simple grain-free pancakes. Aka pancakes without any grains in the ingredients.

So yeah these are gluten-free.

Not that I personally care about all that, but I understand that might be appealing to some of you.

The absence of white flour actually makes these pancakes a lighter, healthier option.

And that is what I care about.

So everyone’s happy.

Except for my vegan friends out there.

The egg part is kind of necessary.

Paleo peeps, simply leave out the baking powder.

Or diverge from your diet just a bit, and throw that pinch of powder in there.

(No one will know…)

So now you’re probably wondering what else goes into these easy, supposedly healthy pancakes.

First, you’re going to beat a couple of eggs very well. Emphasis on the “very”. Then mix in 1/3 cup of mashed banana. “Mashed” as in no lumps are remaining. We’re not going for lumpy cakes here. To your egg/banana mixture, throw in a generous pinch of ground cinnamon, a splash of pure vanilla extract, a wee bit of baking powder to give your cakes a titch of lift, and salt, of course. Pour little circles of batter onto a hot nonstick skillet greased with tropical coconut oil, then cook until golden. Top your pancakes with some salted creamy almond butter, pure maple syrup, and banana slices, if you wish.

Bam! Breakfast is served.

P.S. Do not attempt to make big pancakes. Even if your flipping game is usually on point, you will not be able to flip these thin, delicate cakes. I don’t care how pro you think you are.

P.P.S. Pretty much any fresh fruit would be super yum on top of these pancakes. Especially berries. I was a lame-o, however, and did not have any in my possession at the time.

P.P.P.S. Yes, they actually taste good. Think thicker crepes. I’ve heard people compare them to the center of french toast. And those peeps are definitely not wrong.

P.P.P.P.S. There are so many versions of this recipe out there, but I got my inspo from The Kitchn. And yep, I spelled “Kitchn” properly.
