Let’s make fancy, extra savory grilled cheeses!

Because everyone knows that grilled cheeses always hit the spot when you’re craving something cheesy and comforting.

This sandwich really takes the concept of a grilled cheese to a whole other level.

As in, it might be kinda hard to enjoy a regular grilled cheese after sinking your teeth into this gooey, crispy, flavorful exquisiteness.

So now you’re probably wondering what could possibly make this sandwich so swanky.

Well, there is roasted garlic involved.

Roasted garlic is 783 times better than regular, raw garlic.

It’s sweeter and a lot more mellow.

Which means you can easily make a few cloves disappear all by yourself.

Like magic.

And the second special ingredient is… sauteed cauliflower!

So yeah there is some veggie action going on.

In case you need a real reason to scarf down two sandwiches in one sitting, or standing (at the counter) because clearly you’re too lazy or eager to make it over to the table and take a seat.

Even if you’re not a fan of cauliflower, cheese and roasted garlic and perfectly crispy golden brown whole grain bread might just help change your mind.

Cheese has the power to do that to a person, don’t yuh know?

Now I already went over how to grill a cheese sandwich like a boss, so apply those same techniques here and you won’t be disappointed.

I’ve already hinted at most of the ingredients, but it doesn’t hurt to get your saliva working a little bit more.

Fresh cauliflower is sauteed in olive oil until perfectly tender and crispy, then mixed with spicy red pepper flakes, fresh ground black pepper, and sweet roasted garlic before being layered between two slices of whole grain bread with lots of extra flavorful sharp white cheddar and Parmesan cheese! Don’t forget to slather some mayo on the outside of your bread to get a golden brown toastiness that all grilled cheeses deserve.

P.S. Add as much roasted garlic as you want… within reason. I usually just go for 1 large clove or 2 smaller cloves. If you’re already married with kids, 3 large cloves can’t do any harm.
