Havarti Veggie Sandwich | Living Healthy in Seattle

Sandwiches are pretty fantastic.

Here’s why:

1. They come together quickly. I guess you could spend hours making a sandwich, but let’s be honest, who has the time or patience to do that? Not me.

2. There are about 1,539,803,237 different sandwiches you could make… or more. In other words, your taste buds shouldn’t be getting bored anytime soon.

3. They pack well! Eating a homemade lunch at work or school saves money (as in a four-story home on the lake complete with two pools, a tennis court and a personal library might actually happen) and it’s often healthier. No more “did I just accidentally eat three servings of pad thai for lunch?”

(Okay that was about three reasons in one.)

4. Sandwiches are delicious. Nuff said.

5. Is my favorite number. 🙂

In case you’re in a PB&J rut, I suggest you build a healthy, fresh sandwich featuring hearty whole grain sandwich bread, vegan mayo, creamy Havarti cheese, mashed avocado, thinly sliced cucumbers, juicy tomatoes, crisp lettuce and a wee bit of sprouts. Bam! Now that’s a sandwich.

P.S. there really is no such thing as a PB&J rut. It’s more of a PB&J love affair.
